Big Game Finisher

The Big Game, Super Bowl XLVIII, is this Sunday.  Though I am saddened that my team did not make it to the Big Game again this year I still plan on having a great time on Super Bowl Sunday.  The excitement at kick-off, the thrill and sometimes let down of the half-time show, and of course the commercials will entertain for hours.  Besides, any occasion that means I can invite people over and entertain is a good time!  I usually go for the usual fare, chips, dip, chicken wings, subs and sliders, but it is fun to add some themed items as well.  Like a hot bean and taco dip in a rectangular baking dish with sour cream piped yard lines, or a huge football shaped Rice Krispie Football for an edible centerpiece (laces done in Wilton Fondant, of course!), so this fun but grown up dessert is right up my alley.   No matter which team you are rooting for this Sunday, this cake, with team color themed M&M’s, is a big game finisher that will bring a smile to your guests faces, just don’t walk in front of the TV with it!

Super Bowl Pumpkin Spice Cake

1 (18.25 oz.) box spice cake mix

1 (15 oz.) can pumpkin pie filling

3 large eggs

1/3 cup beer

4 (8 oz.) packages cream cheese, softened

1 stick (1/4 lb.) unsalted butter, softened

1 cup confectioners’ sugar, sifted

1 teaspoon vanilla extract

1/4 teaspoon each yellow, orange and green food coloring

6 pretzel sticks

22  M&M’s in 2 colors

2 Hershey’s Hugs

1 Palmer chocolate football candy

Preheat oven to 350°F. Grease and flour a 9-by-13- inch baking pan; set aside.

Combine cake ingredients in large bowl. Mix on low speed for 30 seconds; scrape sides of bowl. Beat on medium-high speed for 2 minutes. Spread batter in pan.

Bake until a toothpick inserted in center comes out clean, 32 to 35 minutes. Cool on a rack for 10 minutes. Turn cake out onto rack and cool completely.

Beat together cream cheese, butter, confectioners’ sugar and vanilla until smooth and fluffy. Set aside 3 (1/4-cup) portions of frosting. Leave 1 white. Tint 1 with yellow food coloring and another with orange. Tint remaining frosting with green food coloring; spread evenly over cooled cake.

Spoon white frosting into a pastry bag fitted with a small, round tip. Spread yellow frosting over 1 “end zone” and orange frosting over other. Pipe yard lines and end zone lines on cake. Use remaining frosting to write names of teams in end zones.

Use frosting and 3 pretzels to construct each “goal post”; stick a goal post in each end zone. Arrange “players (M&M’s),” “refs (Hershey Hugs)” and “ball (Palmer chocolate football).”

M&M Peanut Butter

M&M Peanut Butter 38 oz Gusset Bag

I’ve always enjoyed my fair share of M&Ms. Over the last 20 years, Mars Inc. has invented a large variety of these “colorful, button shaped” candies. One of the many bold ingredients they incorporated into the chocolates is peanut butter – hence the birth of peanut butter M&Ms.

Normally I’d be the first one to admit this combo is fantastic, as both sweets are at the top of my list. However, I was a little bit disappointed. While the m&m’s taste as good as ever, they are double packed with an overwhelming amount of peanut butter. With an 80 to 20 ratio, you have to be COMMITTED to that peanut butter. And if you are – throw away your spoons and your half-eaten PB jars, because these candies will definitely provide you with more satisfaction. With a 38 oz Gusset Bag at your bedside, your set for at least a week or a two. Just don’t forget to eat your dinner.

Marc Inc, however, continues to be one of the leading candy companies in the country. Good news – if a particular M&M brand doesn’t suit your taste, there are plenty of others just waiting to be eaten. Guaranteed one of their products will make your mouth water, just the way a candy should.
